One of the little projects I'm working on is to transfer all of my recipes onto the computer. I'm tired of keeping up with all the slips of paper and note cards. I'll also get around to adding the favorites from some of my cookbooks.
As I was typing up a recipe for Mexican Lasagna I just had to chuckle to myself. I never make this recipe any more. My kids have never been big fans of casseroles. Drives me crazy. I think that casseroles were a meal staple growing up. I know mom would use them to feed a family on a budget. In fact, I would look forward to sunflower casserole. (Nothing to do with sunflowers but it had corn and hamburger and you know, the color.) Steven likes to be able to pick apart his meat, vegetables, and starch. If I sat sunflower casserole in front of him I'd hear, "What's that?"
So one thing he does like to eat is stir fry. I made chicken stir fry for him last night and made sure the vegetables were in big chunks. He wouldn't even try the zucchini. He said the only way he'd eat that is fried like Jo Mama does it. Thanks Jo Mama! Once he's had your cooking he's ruint for mine! :0)
